I wanted to let you all know that working with hot sugar is DANGEROUS.
I made these chocolate caramel macarons for Passover last night. They came out okay. Delicious. Sort of fugly looking at least compared to the picture in the New York Times but they tasted decadently chocolatey, and the texture was perfect.
But what I want to say is if you ever work with hot sugar and water- watch out with the clean up. That shit's like GLASS. I punctured my finger with a piece of it as I wiped the counter. I almost got hurt several times cleaning up.
