Played around with different tastes to work with pork chops. So here is Pork Chops with Spinach and Tomato Dressing
Pork Chops with Spinach and Tomato Dressing
Pork Chops
Chopped Spinach, 1 frozen package (thawed)
Small Vidalia Onion, finely chopped
3/4 cup Sun-Dried Tomatoes (jarred not bagged), chopped
1/2 cup Ricotta Cheese
Flour
Skim Milk
Season both sides of the pork chops with salt and pepper while warming up a frying pan with some olive oil over medium heat. Cooking the pork chops in the pan. Once fully cooked set aside wrapped in aluminum foil to keep warm.
Add the onion into the pan with the olive oil and drippings. Sweat the onions for a few minutes. Sprinkle in maybe a tablespoon of flour and stir around until the flour is soaked up. Slowly add in about 3/4 cup of milk. Add in the spinach and tomatoes. Lastly add in the ricotta. Once mixed, top pork chops with the spinach mixture. I had these with roasted potatoes.
