Dinner ideas

I am giving dinner to the volunteers who helped with the feast in August. Not sure what to serve, was thinking of a roast dinner, but decided today that I would be better off with a casserole thing. What is your best wow casserole/crockpot/one dish dinner. Boneless chicken is on sale this week.

Crockpot=beef stew or pot roast. Easy peasy, paired with warm dinner rolls & dessert is a fantastic meal. If you need a recipe, I will be happy to oblige.

Cassarole=lasagna. Again, easy to make (you don't have to cook the pasta first as long as you use enough sauce) and paired with garlic bread and/or salad is another crowd pleaser.

Cassarole=chicken/noodle/cheese/veg. Very versatile, and forgiving. Paired with rolls, awesome yumminess.

Coat the chicken with herbs and breadcrumbs and bake it, serve sliced alongside roasted veggies, nummy rice or pasta and a huge salad. Good bread, natch. Ice cream for dessert. You can roast portobellos if there are any vegetarians.

I have a recipe for a cranberry sauerkraut sauce that is yummy for chicken or pork.

'Fraid I won't be much help on this. It has been so long since I cooked a big meal for a group of folks that I don't know if I could pull it off.

But I do remember cooking a delicious shepherd's pie that had sour cream and real butter mixed in with the potatoes, and layers of browned ground beef, sharp cheddar, sautéd onions and mushrooms, green peas, green beans, finely sliced carrots... and that's all I can think of right now, but there might have been another veggie. Served with a salad and then ice cream for dessert. My hubby absolutely adored it.
