five pounds of apples makes kind of a lot of applesauce. it tastes like pie filling, which makes me wonder if i used too much sugar and didn't mash it enough. it's pretty chunky. it is also REALLY GOOD and better than the commercial stuff. i am excite! i put about three-quarters of it in the freezer, tho, because there's no way i can finish it in a week and a half.
(for the record, i used six cups of water, half of which i had to drain out when the apples were cooked, a little less than a cup of white sugar, a little less than a cup of brown sugar, and an indeterminate amount of cinnamon, ie "enough so you can taste it".)
also, applesauce is a lot easier than i was expecting, if you don't count peeling and coring five pounds of macintoshes. ("why didn't you leave the peel on??" my dad asked me, when i called to find out if i could freeze the stuff. "i thought the apples would be too hard to cut," i said. despite the fact that if i'd left the peel on, it would've saved me some time. hey, i never claimed to be a rational cook.)
so. yes. i have applesauce. who wants some?
