While writing my dissertation I completely let my diet go. Not a particularly smart thing to do, but I had to let it go for the sake of my sanity. I'm *lucky* that I managed to maintain the weight, and not put anything on, but now I'm getting frustrated with the food situation at home.
I've spent four years cooking for myself, yes, and yet I still don't know what exactly simple and healthy really means. Simple in uni tended to be rice with
furikake and a fried egg along with whatever nugget type thing I found in the freezer. Simple, but not nutritious. Not even by half.
If any of you have any simple and healthy recipes, could you please leave them in the comments? In particular I'm looking for any soup or stew type recipes that can keep for longer periods of time either in the fridge or freezer, but any other meat dishes are welcome. I have no problems with vegetables -- the more the better -- but I don't eat beef. Thanks in advance. :)

ETA:
nopseud's comment just reminded me, I have no ready access to an oven, or a microwave. We only have a toaster oven. I can just about grill veg with it, but that's about it.
