Personally, I don't care too much for ground beef, but, after discovering an old Campbell's "Cooking With Soup" cookbook at my parent's new pad (the lady left several cooking and gardening books behind!), I decided to give it a try. Old-Fashioned Meat Loaf
1 can Vegetable Soup
2 lbs Ground Beef
1/2 C. Dried Bread Crumbs
1/2 C. Chopped Onion
2 Tbsp. Chopped Parsley
1 Tbsp. Worchestershire
1 Egg, Slightly Beaten
1 Tsp. Salt
Dash Pepper
Combine all ingredients; mix thoroughly. Shape firmly into a loaf; place in shallow baking pan. Bake in a 350 degree oven 1.25 hours. If desired, after loaf has baked 1 hour, garnish top with 4 tomato slices and 1/2 cup shredded mild cheese; bake 15 mins more.
The only change I really made to the recipe was substituted ketchup for the tomato slices on top. It got a 5 star rating from the meatloaf lover in this house, so I thought I'd share it :) The cookbook has all kinds of interesting sounding classic recipes.
