Recipe of the Week

Today is all about snacks! Or rather, snacks that I love to have in the summer.

In my part of the world, the summers are hot and humid, and all I want to eat is cold food. So here are a couple of things that I eat and drink, oh, probably on a daily basis :)

Crunchy Guacamole

Ingredients:
- 3-4 avocados
- half a red onion- minced
- 2 cloves of garlic- minced
- 2 roma tomatoes- diced
- 1 jalapeno- minced
- 1/4 cup toasted pepitas (I like to keep them whole)
- 1/4 cup smoked almonds- chopped
- 1/4 cup diced jicama
- 1/4 cup toasted corn nuts (I like them whole)
- 1/2 cup chopped cilantro
- lime juice to taste
- a pinch of salt and pepper

Directions:
1. Mash up the avocados. I personally like it a little chunky, but you can make it as smooth as you want.

2. Add the rest of the ingredients and combine.

3. Serve with tortilla chips and enjoy!!!

Iced Chai Tea

Ingredients:
- 2 bags of your favorite chai tea
- 1.5 cups of water
- 1-2 tbsps of milk
- 1 tbsp of honey
- 1 tbsp of sugar

Directions:
1. Prepare the tea the way you normally do. Let it steep for 5 extra minutes.

2. Chill it until it has reached the desired temperature.
*I blast chill it in the freezer for 20 minutes. Or I make a ton of tea the night before and store it in my fridge

3. In a tall glass, add the sugar and honey.

4. Pour the tea into the glass and mix until the sugar has dissolved.
*At this point, the honey doesn't need to be dissolved

5. Add milk until the drink becomes a light brown color.

6. Mix until all the honey has been dissolved.

7. Drop some more ice cubes in and Enjoy!!

Hope you like these summer snacks as much as I do!
