Since it's been two weeks since I posted my last recipe, I wanted to post two. The first can be found here.

But anyways :)

Veggie Delite Paninis with Sweet Potato Fries

Ingredients:
- 1 roasted red pepper
- 1 green pepper
- 3 tomatoes
- 2 red onions (medium)
- one loaf of bread- I like sourdough
- spinach or arugula
- mozzarella
- 3 avocados
- honey mustard dressing (or any dressing you like)

- 5-6 medium sweet potatoes
- olive oil
- salt, pepper, garlic, red pepper flakes

Directions:
1. Pre-heat the oven to 375 degrees F.

2. Cut the peppers into narrow strips. Cut the tomatoes in nice circles.

3. Cut the onions into rings. Put them on a baking sheet and sprinkle with olive oil, salt, and pepper. Bake in oven for 15 minutes.

4. In the mean time, cut the bread into thick slices. Cut the mozzarella into thin slices. Slice the avocado into slices. (A/N: Lots of slicing and dicing for this one!)

5. Cut the sweet potatoes into long, 'fry-like' shapes. Toss them with olive oil, salt, pepper, garlic powder, and red pepper flakes until evenly and lightly coated.

6. Take out the onions and put in the sweet potato. Bake the sweet potato for 25 min. After that, broil them on high for 7 min. Then flip them over and broil again for another 7 min. Fries are done :)

7. Build your sandwich. I personally like to put a slice of bread, then tomatoes and onion, then cheese and avocado, then the peppers and arugula/spinach. Then I put a little bit of dressing for taste and grill the sandwiches :)

8. Eat the fries with ketchup or maybe some sour cream :)
