Things and Stuff.

I've had a mostly fantastic week. Tuesday was pretty rough from the middle of the day until the end because I had a slight jobby explosion, but fontosaurus helped talk me down from my ledge, and later I messaged P to vent and he called me a few minutes later, just as I was getting into bed, so at least my day ended on a sweet note.

I was extra super social this week. I met penghuin on Wednesday for dinner, and then saw him again Thursday and Friday nights and had breakfast with him on Saturday. ("Those shoes suck." "Not literally." "That one lives.") I had such a fantastic time. And today was Illunchminati day with frozenrhino, misanthropoet, bertine, inclementine, Ian, joeylemur, kevelyn63, and other people whose LJ names I, perhaps not surprisingly, do not remember. My terrible memory. Let me show you it. frozenrhino gave me gorgeous prints of a photo of me from my last brunch, and I lurves them. I also lurves the bacon. There was loads of bacony goodness, as well as loads of fabulous conversation about all sorts of fun things and also a great deal of laughter. And bertine watches Torchwood! Oh, yay. Poor bertine will no doubt quickly tire of my Torchwoody squeeing. Again, I had such a great time, and I can't wait for the Sunday after next.

P called tonight, and it was wonderful to hear his voice. I love talking to him. Our conversations are always so easy and comfortable, without being that sort of in-a-rut, habbity kind of comfortable. He's so much fun to talk to and I always end up feeling great for hours after. I wish very much that he didn't live so far away. Geography frustrates me. This has been the case since 7th grade. I really should look into winning the lottery.

So. I promised to email a pancake recipe to inclementine, but because I am lazy and posting is easier, here it is.

1/2 pint fresh blueberries
1 cup all-purpose flour
1/2 teaspoon grated lemon zest
2 teaspoons sugar
1 tablespoon stone-ground cornmeal
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup buttermilk
1/4 cup milk (plus 1 to 2 tablespoons more if the batter is too thick)
1 large egg, separated
1/2 teaspoon vanilla extract
Vegetable oil for brushing griddle

(I don't bother with the blueberries, the lemon zest, or the cornmeal, mostly because I don't generally have them. I'll give you the directions for with-blueberries.)

1. In a small bowl, gently toss the blueberries and 2 teaspoons flour; set aside. In a larger bowl, mix together the lemon zest and the remaining dry ingredients. Pour the buttermilk and the milk into a 2-cup Pyrex measuring cup and whisk in the egg white. Separately whisk together the egg yolk and the melted butter, and then combine with the other wet ingredients. Add the wet ingredients to the dry ingredients and stir together with a rubber spatula until just mixed. Carefully fold in the blueberries until evenly distributed throughout the batter.

2. Meanwhile, heat a griddle or large skillet over medium-high heat. Brush the pan liberally with vegetable oil. When water splashed on the surface sizzles, pour or ladle the batter, about 1/4 cup at a time, onto the griddle, making certain not to overcrowd the pan. When bubbles appear in the top of the pancake and the pancake bottoms are brown (this should take 2 to 3 minutes), carefully flip the pancakes over and cook until the remaining side has browned, 1 to 2 minutes longer. Re-oil the skillet and repeat for the next batch of pancakes. Serve hot.

As kevelyn63 and I decided, it is a law of the universe that the first pancake will be awful. This is always the case. There is nothing that can be done about this, so just accept that the first pancake is the dog's and move on.
