In general, I like having a variety of veggies in the fridge each week for use, and I've made a number of new dishes that I never would have done if not for already having the vegetable(s). So far this week, I have made:
Crimson Risotto (beets, beet greens)
Loubiyeh (green beans, onions)
Roasted Radishes (radishes)
New Mexico Mashed Potatoes (red potatoes, garlic)
Squash Casserole (yellow squash, onions)
On deck for tonight is: Curried Cauliflower Stir-Fry (cauliflower, kale) and possibly Spicy Cucumber Salad (cucumbers).
Of course, I get a new box of food today...
