I've been trying to make sure that I cook up some food on the weekend so I have food to eat during the week (and thus don't buy food on campus). This week I was feeling uninspired, so I went to
What the fuck should I make for dinner? (veg version linked) and went through until I found something that seemed tasty and not too much effort. Eventually I found this
North African lentil soup and decided that Africa was an overlooked region of the world for my cooking attempts so I'd give it a shot (plus I already had all the ingredients, minus lime).
I went to the grocery store anyway, figuring that I'd make some salad for lunch and I could use some fruit. This meant that I got to enjoy the -16 C (-23 C with windchill) weather. ugh.
When I was at the store I picked up some celery to add to the soup. It probably didn't need it, though it didn't hurt, but I'm fond of the Italian
holy trinity so this never seems like a bad idea to me. I only added one stalk and I fried it up with the other veggies.
It's quite a tasty soup, drizzling olive oil on top makes it more delicious (and I highly recommend doing so). I could have used a bigger (or second) carrot and perhaps an extra celery stalk, but I didn't want to modify the recipe too much since this was my first try. I really like that it's quite simple, the only spices are cumin, salt and pepper.
It's also a really inexpensive soup since it's mostly lentils which are dirt cheap. I'll totally make this again.
