No power last night and a free recipe

Yesterday, at about 815 pmish I had just pulled dinner out of the oven, it was a lovely chicken n zucchini casserole and jessica had been home maybe 10 minutes, when bam, i heard a pop outside and the apt went dark. so we scrambled around lighting candles.....i happen to like candles and therefore had a lot of them to light!!

Jessica went outside to look as brian and i were calling edison. he got done with his call earlier than me, as he did the automated reporting where i selected the real live person route.
3 hours we were told.

Somehow we managed to get a stray human. He was standing outside and somehow jessica and brian managed to just by talking to him to convince him that he had to come back to our apt and not be alone. we called edison after 3 hours and they said well, through out the 3 hours and now they didn't know how long. so jessica went over to stay with shirley at shirley's moms place, richard decided he needed to go to meijers for ac. we had called brian's parents just in case to tell them to leave the screen door unlocked, and were just sitting talking about nothing consequential when the lights flickered on and off. another couple of minutes and they were on for the night, total time as close as I can see was 2 hrs and 40 minites.

So I called Jessica and she said something silly, and said she'd still go to shirleys as was halfway there.

so that was our evening. and how was yours? Oh yeah, and i got raves for the dinner, with the few i'd do this to make it better noises. so you can all know what it was here it is......
heat oven to 375, spray glass 9x13 with pam. brown 1 lb burger and 1 med onion chopped, while browning, mix 3/4 cup regular rice and 1 cup of water in bottom of casserole. layer drained meat/onion mix over that, sprinkle with salt and pepper then layer zucchin1 sliced into 1/4 inch size pieces over that, i used 2 med size (it called for 2 cups) and i think i had more than that. then sprinkle one large tomato, chopped over that, then pour 1 19oz can of progresso tomato basil soup over tat, cover with a sprayed sheet of aluminum foil for 40 minutes, remove and top with 2 cups grated mozzarella, leave fil off bake 10 to 15 minutes till edges bubble and cheese lightly browned.

as for my changes, i used chicken, only did 350 degrees, sprinkled the salt and pepper over the tomatos, i used more tomatos and zucchini and i put fresh basil from my basil on the tomatos too before the soup.

The suggestions were add garlic, more cheese and more basil. thought maybe layering cheese inside of the casserole might be good. so if your interested try it!
