Herby Black-eyed Pea (Zeytinyağlı Börülce)

This is one of our favorite super-cheap, super-easy, super-fast one-dish dinners. Modified from this guy's great Turkish recipe. Lots of great stuff at his site, but you may need to tweak them a bit for using canned beans and other techniques and substitute ingredients.

Pomegranate syrup is an optional sweet-sour garnish commonly used for salad dressings. You can use some sweetened lemon juice, but I don't find it necessary with this recipe.

2 15oz cans blackeyed peas -- drained and rinsed
1 large onion -- minced
2 large red bell pepper -- minced
1/4 cup olive oil
1/2 bunch fresh parsley -- chopped
1 bunch fresh dill -- chopped
3 tablespoons fresh mint -- chopped
1 1/2 tablespoons sumac
1 1/2 teaspoons sugar
1 1/2 cups water
1 teaspoon pomegranate syrup -- (optional)

Put all ingredients in a large pot except for pomegranate syrup. Start to boil, cover and reduce heat.

Simmer, stirring often, for at least 30 minutes.

Serve with rice, garnish with pomegranate syrup.
