raid refrigerator. Discover three VERY (verging on over-) ripe roma tomatoes, a sack of crimini mushrooms. Add to this the contents of freezer, pantry, and grocery run as follows:
Boil pasta. While waiting for the water to boil, combine in bowl 1:
coarse chopped tomatoes
entire (smaller) package of fresh basil
about 1tsp sea salt ("eh" school of splash-measure)
about 3T balsamic vinegar (also by the "eh" school)
slice and combine in bowl 2:
2 pork sirloins (hooray freezer)
about 1/4c lemon thyme ("eh")
2T olive oil
1T balsamic vinegar
2 large cloves garlic, finely chopped
1 large shallot, finely chopped
Slice mushrooms. Sautee with olive oil and drained off vinegar/tomato juice from bowl 1.
Pasta is finished: drain and combine with olive oil and contents in bowl 1.
Mushrooms are done! combine in bowl 1. Turn up the heat, dump bowl 2 into the mushroom pan, brown, then turn the heat down until meat is done. combine in bowl 1.
