30 Minute Chilli

This was well received by a good friend so I thought I'd share it. It's simple, quick and very cheap.

Serves 2 to 3 people.

2 small green peppers (or red and yellow, depends what's is in season)
500g of mince beef (Economy mince can be a little fatty so use less oil for frying off the peppers and onions if you're being a cheap skate!)
1 med onion
chilli powder (to taste - I suggest a little at a time or using a packet of chilli mix if you're feeling lazy)
Encona Chilli Sauce - the scotch bonnet pepper variety (1.5 tea spooons or to taste).
1 tin of red kidney beans
1 tin of chopped tomatoes.
2 table spoons of tomato puree
2 minced cloves of garlic
Juice of half a lemon
1 table spoon of oil (prf olive, works better when frying the onions and peppers)
1/4 of a pint of dark medium cider or 1/4 pint of lager(I find K Cider works really well!)

I chop the onions and green peppers (quite finely) and fry them lightly in the oil for 3 or four minutes in a pre-heated large wok or saucepan.

Throw in the mince beef and brown with the onions/peppers for about five minutes, pressing down on the meat to separate it (so it doesn't clump). Add the lemon juice about 3 minutes into the above step

Then, when the beef has browned, throw in the tomatoes and chilli powder and encona chilli sauce a bit at a time. Once the tomatoes have warmed, taste again and add more chilli powder and encona chilli sauce if applicable (I recommend the one made with scotch bonnet peppers as it has the right kick).

Add the crushed or minced garlic and stir well.

Then add the kidney beans and cider, cover and cook for 20 more minutes - check and stir every five minutes.

Serve with doritos, rice and a bit of sour cream if you're in the mood.

This is my patented 30 minute chilli.
