My ultimate comfort food -at age 33 - is toasted cheese sandwiches with tomato soup and dumplings. This is perhaps a shortcut version of that.
My father created this in his bachelor days, and used to serve it to us kids when we were little.
For one serving:
Take a piece of lightly toasted, lightly buttered white bread. Place in a pasta bowl, and put one thin slice of processed cheese on the bread. Make one can of tomato soup and dump it (steaming hot) - at least 1/2 the can - over the bread. The cheese will melt. Top with grated cheese if so desired.
Of course in college, my roomate and I would cut up soft cheese (like muenster) in small pieces and then dump tomato soup over that, and call it dinner. Yum.
