Alrighty-This is definitely a southern thing, but it's completely trashy, and everyone in my family always complains if I don't make it for any given holiday...This is my cousin Bobbi-Jean's recipe, and she passed away a few years back and now everyone always wants me to make her cracker salad.




Southern-Style Cracker Salad

-1 sleeve saltine crackers (DO NOT BUY THE NO SALT KIND. They're gross.)
-1.5 cups mayonnaise
-1 large tomato, finely chopped and 'drained' on paper towels
-3 whole green onions, finely chopped
-1 hard boiled egg, shredded
-1/2 green (bell) pepper, finely chopped
-1/4 small videlia onion, shredded
-1 teaspoon salt
-1/2 teaspoon black pepper
-1/8 teaspoon paprika
-1/8 teaspoon lawrey's seasoning salt

Crush crackers. Not too fine, you'll want some pretty big chunks in there. Stir together green onions, videlia onion, tomato, bell pepper, and egg in a seperate bowl. Combine spices and mayonnaise in another bowl. Stir well.

Add vegetables/egg to the crackers. Pour mayonnaise mixture over the top and mix well.

*I know some people who add a tiny can of finely diced black olives, but my family doesn't care for them. They are added in with the other veggies if you want to add them.*
