Dear Hans,

How are you? I hope you had a nice Thanksgiving. Mine was pleasant; I got to see some cousins I haven't seen since I was small, and I got to play with some of the babies.

I hope you, the boys and the cats are doing well.

Dear Metody,

Our Thanksgiving was fine. We prepared a turkey and various side dishes. The boys helped.

We are doing well enough, though we all miss you.

I am pleased that you had a good Thanksgiving with your family.

Do you remember the year we had stuffed turkeys for thanksgiving? I put mine out to decorate the table this year.

We managed. Though your cooking is much better.

I gave each of the cats (save Mister Skinless of course) a small plate of turkey after our dinner. They were pleased.

Do you have any suggestions for what we do with the leftovers? I made an overlarge bird, and we cannot possibly eat that many turkey sandwiches.

You can freeze turkey. Debone it, then wrap it tightly in foil, then put it in a plastic bag. Chopped turkey makes a great substitute in chicken salad.

You can also make broth. Brown the bones in a little butter or oil - it will not taste so good if you do not brown them - then cook them in water for however long you can. Toss in a handful of the meat, and a bayleaf and some pepper corns, and strain before you freeze it. It is best frozen in small portions, just one or two cups. It is good when you are sick and cannot keep anything else down, or as a base for soup.

The boys and I made hand turkeys. Apparently we should have allowed the cats to do so, as well.

That is very cute! The cats are very reluctant to let someone touch their paws, though.
