This is one of the most delicious pasta salads I have ever made!
1/2 lb of orzo
1 lb of raw uncooked spinach
1 medium red onion, finely chopped
7 oz. feta cheese, crumbled
3.5 oz pitted kalamata olives, coarsely chopped
3 cloves garlic, minced
2 Tbsp balsamic vinegar
Olive oil
Sea Salt
Freshly cracked black pepper, to taste.
Cook the orzo until tender.
While cooking the orzo, wilt the spinach in olive oil and sea salt over medium in a heavy bottom skillet. Do not over cook.
Using a little more olive oil sweat the onion over medium heat until tender but not caramelized.
Rinse the orzo in cold water after cooking.
Combine all of the rest of the ingredients in a large bowl, refrigerate until chilled and then serve.
I cannot wait to bring this to a potluck or family gathering.
