Let's cook with coconut milk!
Ok... so I totally made this from scratch and I'm sure I can improve upon it but here's what I did...
1 can of coconut milk
1 cup of water
3 T rice vinegar
1/4th cup of peanut butter
2 cloves of garlic minced
Green curry, to taste
Soy sauce, to taste
Sriracha, to taste
Bag of mixed vegetables (Trader Joe's Hodgepodge)
14 oz Extra firm tofu, cubed.
It cooked very quickly! I reduced the water off of the dish and served it over basmati rice!
