I DID IT
beets are so awesome.
kori boiled beets and made a beet and asparagus salad with candied walnuts and goat cheese a couple days ago, and last night i ate the rest of it, which was comprised almost entirely of beets.
i ate my fill of beets and goat cheese with a little balsamic.
it's not easy for me to eat my fill of anything.
this morning, MY PEE CHANGED COLOR!
it was the color of raspberry iced tea, a sort of pinkish brown.
i kind of wish someone had been there to see me laughing out loud as i shot out a murky stream.
