Now that I'm going through the recipes I've made lately, I'm super stoked to share them! So, since it's a rainy Friday afternoon and the Littlest Hernandez is being entertained by the Fresh Beat Band because I'm a bad mama, let's have another recipe, this time for a side dish I recently made. I love curry and I love cauliflower, and together they are very tasty!
Ingredients:
- 1/4 cup olive oil
- 2 teaspoons curry powder (I use a Trinidad-style curry that my MIL always brings me after her visits home, but any kind of curry powder will do).
- 2 teaspoons sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups cauliflower florets (One medium-large head cauliflower, cut up).
Method:
1. Preheat oven to 400°F. Mix olive oil, curry powder, sugar, lemon juice, salt and pepper in large bowl. Add cauliflower; toss to coat.
2. Place in 13x9-inch baking dish; cover with foil. Bake 15 minutes.
3. Remove foil cover; bake, uncovered, an additional 10 to 15 min. or until cauliflower is lightly browned.
Allegedly serves 8, but I think more like 4-6, depending on what else you're serving. I thought this was a super tasty recipe - nice and sweet, not spicy, with a really understated curry flavor.
