Recipe: Cheesy Pasta Bake

INGREDIENTS:

- 1 (15 oz) jar Alfredo sauce
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded Swiss cheese (I use a shredded Italian cheese mix instead)
- 1/4 cup crumbled bleu cheese (I use 1/2 cup if I use it at all - I quite like the recipe without the bleu cheese just as well as with it)
- 1 cup whole milk (I'm sure 1% or 2% or skim would be fine)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 8 oz. penne pasta
*Optional* - 1/4 teaspoon garlic powder - I also think some red pepper flakes would give this a nice little kick.

METHOD:

- Bring water to a boil for pasta.
- Preheat oven to 400*

1. Combine in large bowl: Alfredo sauce; 1 cup cheddar cheese; Swiss cheese; bleu cheese; milk; salt; pepper. Set aside.

2. Cook pasta following package directions; drain. Stir into cheese sauce until well blended.

3. Transfer to 2-quart baking dish; top with remaining 1 cup cheddar cheese. Bake 20-25 minutes or until hot and bubbly.

Serves 8. (Maybe as a side dish. If this is your main meal, or you're serving with salad/breadsticks, it will serve more like 4-6, depending on how hungry you are and if you have seconds or not.)
