Couscous with chickpeas and cucumbers and oil and vinegar and salt and pepper and garlic powder and nothing else.
3/4 C dry couscous
3/4 C broth
half a can of garbanzo beans, rinsed
half a cucumber, chopped
salt
pepper
2 T oil (or to taste)
2 T vinegar (or to taste) (I used rice vinegar, but you can use whatever vinegar you like or lemon juice)
garlic powder
Bring broth to boil. Add couscous and remove from heat. Let stand 5 minutes, then fluff with fork. Add chickpeas, cucumber, oil, vinegar, salt, garlic powder, pepper and toss together. Let cool and serve!
