It must have happened occasionally - while most of Mordor is busy chasing the illusion presented by the Armies of the West and their suicide mission, that would clear the way for more than Frodo and Sam, I figure.

And going by their names, they are not captive Gondorian knights or anything like that either?

No sitting around for these guys, waiting on liberators - I'm sure they're pretty cut off from outside news, so they've got to fend for themselves to the degree that they're able to do so.

Nope. In my mind, Mharjada is Haradric and Enkit is a Variag. Mordor can't be counting strictly on captured Gondorians to farm its fields; I'm assuming the lower classes of its own subject or allied populations would be the main sources of slave labor, with infusions from time to time of prisoners of war and conquest.
