As ever, the really fun recipes are created out of what needs to be eaten or else thrown away:
Wings of Icarus:
allow 2 chicken breasts to marinate in their own juices at the bottom of the fridge for a day or so. then, at 9:30 on a Monday night, at the very edge of what distinguishes edible raw meat from garbage, rinse the chicken off (a lot) and cut into finger-length strips.
Coat strips in a dish of milk, then a mixture of panko bread crumbs, parmesean cheese, and ground almonds. Then coat the strips in a dish of beaten eggs, then back in the panko mixture.
Rest the coated strips on wax paper for as long as you can - which isn't very long if you need to get up for work the next day.
Heat peanut oil in a saute pan and fry the strips gently until golden brown. Then stuff them in a plastic container wrapped in paper towels. Go to bed.
In the morning, heat the strips in the microwave for roughly one minute. Meanwhile, fry an egg sunny-side up.
Toss the egg and the strips on a plate and serve with toast. Use the strips to burst the yolk.
