Glad to hear how well everything has gone with you! Sorry to hear about your dad. That really really blows. I thought I would send along some pretty healthy recipes that might work well with his dietary restrictions and that I personally love:

In general you might try making more soups since they tend not to use too much oil. Also maybe try cooking more Mediterranean food, which oftentimes uses olives in lieu of actual salt. Xi1fan4 and Chinese-style broths are probably good choices. Oh, and grilled meats with spice rubs. I'm sure my mom will have lots of ideas on how to cook without oil and salt since my grandma had similar restrictions. She got so used to it that she uses very little salt now and whenever she cooks, I always end up adding more salt.

saltless soup is =(. but i mean, i guess we really should learn to live a little less excessively. i'm sure your mom is already all over it, but old habits die hard, and my mom is a stubborn woman. we had fish the other day, and she kept insisting that she didn't use any oil, and yet, there was a distinct layer of oil floating atop the sauce. we'll get there, i'm sure, but it's definitely gonna be work.

thanks for the recipes; maybe i should try my hand at making some of these. xi fan is great, except for the fact that neither of them is really supposed to be eating very much white rice either. man, getting old sucks. =(
