...Kind of. More like a funky tortilla sammich. Filled with vegetarian re fried beans (because regular re frieds are made with LARD--ew), vegetarian cheese (no animal rennet!), spanish rice, black beans seasoned with garlic powder and white pepper, fake meat (textured veggie protein) with sweet onions, and... nope, that was it. It is very delicious.
I also made Johnny Cakes- found a recipe on line and made it Vegan by using flax seed instead of eggs and veggie shortening instead of lard (again-- ew). They're pretty awesome, as well. But I think next time I make them, I'll use a 2:1 cornmeal:flour ratio- there is no flour in this batter. I also added leavening today (baking soda), and now they are a bit softer, and puffier- not so dense. But, for a first time, found online recipe, it's okay.
Also made cookies. Those are weird. James loves them, and I keep eating them, but I feel like they can be better. It was the first recipe I made from the cookbook Adam got me for my birthday- "Vegan with a Vengeance". And I didn't have vegan margarine and I added some stuff I probably shouldn't have to a first-time recipe, but oh well. The dough turned out to be more coarse crumbs than anything and I stupidly thought some oil would fix it. ...It kind of did, but not by much. So I assume it just needs WAY less flour- I really feel like 2 and 1/2 cups is overkill. But it could be the ingrediants just make that much of a difference. OH WELL. They are liked and eaten so there can't be a problem.
