When Brandon and I were in Vegas this March, we had the seriously good fortune to be treated to dinner at Mesa Grill, which is celebrity chef Bobby Flay's Southwestern cuisine restaurant. It was in the top five best meals of my life. Everything from the margaritas to the goat cheese appetizer to the impeccable service delighted me.
Last week, Brandon and I took a trip to the
Heard Museum. While browsing through the bookstore, Brandon happened upon the Mesa Grill cookbook. One of the recipes on the cover caught my eye - "Grilled Asparagus & Goat Cheese Quesadilla with Tomato Jam and Cilantro Yogurt." We didn't buy the cookbook, but that recipe kept tickling my brain throughout the week.
Today, I resolved to find the recipe online and make it for dinner. A Google search, two grocery stores, 90 minutes of prep, and one messy kitchen later, I plated up two lovely quesadillas for us. (I wanted to take photos, but my camera doesn't take pictures well in low light.)
Brandon's first reaction was, "These look too pretty to eat." His next reaction was, "God DAMN these are good!" High praise from such a dedicated meat eater!
The other recipes looked just as delectable. As hesitant as I am to plunk down money for yet another cookbook, I would have to say that this one might be gracing my shelves before long.
