I just made the most kick-ass salad!
This one is inspired by something that
whispernox made me once when we lived together. I decided to add tofu to give it some protein. However, tofu is bland as hell out of the package, so I needed to cook it in something. The reduction (and I think I'm using the right term) was pure luck in that I threw it all together and it tasted good on the first try.
The cooked tofu is pretty awesome all by itself, but when you add in the cool sweetness of the strawberries and the crunchiness of the vegetables, the flavors really stand out.
Ingredients (I don't really measure):
For the reduction
- block of tofu
- rice vinegar
- lime juice
- ginger
- salt
- pepper
- fresh mint leaves
The salad parts
- strawberries
- bag o' salad (or, you know, lettuce and other things)
- half a cucumber
Optional: Brianna's Blush Wine Vinaigrette
Drain tofu and cut into cubes. In a small pan, dump tofu, rice vinegar, lime juice, ginger, salt, and pepper. Stir, put on low heat for about twenty minutes or until mixture is almost cooked away. (Make a little more of the sauce to pour over salad if not using vinaigrette.)
Meanwhile, dump salad stuff into big bowl. Slice cucumber, mint, and strawberries. Throw mint in with tofu for one minute at the end of the cooking time.
Toss all ingredients together, top with a little vinaigrette if you choose, and enjoy!
