Here's one for all those with a sweet tooth, inspired by strawberry lemonade....

There's nothing more beautiful than the perfect combination of sweet and tart.
We were craving lemon cake and something sweet. With the strawberry flavored
frosting and the cream cheese base to take off the edge, this is about the closest
you can get to the perfect cupcake.
Cupcakes: (box mix recipe)
1 box of lemon cake mix
(Ingredients may vary depending on recipe for cake)
1 1/4 cups of water
1/3 cup vegetable oil
3 eggs
Frosting
1 stick butter or margarine
3/4 cup drained and mashed strawberries (we used frozen)
8oz. cream cheese
3 cups confectioner's sugar
Start by making the box recipe for the cake and bake the cupcakes while making the frosting.
The cake we used yielded 24 mini cupcakes and 12 regular size ones. Bake and cool cupcakes
as usual, again following the recipe on the box.
For the frosting:
Mix the butter and cream cheese until creamy, on medium speed for about 1 1/2 minutes. add the strawberries and
mix until the ingredients are completely blended. Add the powdered sugar slowly, mixing as you go.
You may need to add more sugar, we actually doubled the strawberry content and the sugar for a sweeter
frosting. (Note: If you are using frozen strawberries, you may get a little more liquid as they thaw out. Simply
add a little extra sugar or cream cheese to the mix to thicken it up a bit.)
The frosting should be thick enough to hold its shape for a few seconds when poured. Pipe the frosting on the
cupcakes when they're cooled, and enjoy!
