2 1/3 cups bread flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup raisins
2 eggs
1 cup vanilla yogurt
2 tbsp honey
1 tsp cinnamon
glaze
1/2 cup confectioner's sugar
1 tbsp rice milk
Preheat oven to 425 degrees F. Use cooking spray to lightly grease a large loaf pan (9x5 or 10x5 both do nicely). In a large bown light combine the first four ingredients until well-mixed. In a seperate bown whisk together the eggs, yogurt, and cinnamon. then add in the honey and raisins and mix well. Pour the wet mixture into the dry ingredients and mix together until a sticky dough forms into a ball and all dry ingredients are incorporated. Then dump into the loaf pan and smooth until dough is spread to all edges of the pan. Bake in the pre-heated oven for 20 minutes.
While the bread is baking, in a small bowl whisk together the glaze ingredients. Put to one side until the bread is done.
Once the bread comes out of the oven, turn it onto a cooling rack. Let it cool about 20 minutes, then drizzle the glaze all over the top.
