butternut harvest

The garden is starting to slow down production now that it is fall.  We are still getting quite a few peppers and the basil and chard are still thriving, but the tomatoes are done for the year.  We have 9 butternut squash to harvest still.  I bought a tiny 4 pack of butternut seedlings at the grocery store in July, when everything was wilted and half-price.  I think I paid .99 cents total for the seedlings.  The plants just went gangbusters and took over part of the yard.  We've already harvested 4 giant squashes.  Two of them we cooked, two of them we gave away.

What is your favorite way to eat butternut "squarsh" (as the locals pronounce it)?
