So, I made Shrimp&Grits last night for dinner.
It was instigated by eating a fancy pizza joint a week or so ago. They had Shrimp&Grits as an appetizer. It was kinda pathetic.

So I went with an easy recipe I found online. I'd never actually made grits before. So the link had a nice little recipe for some cheesy grits and shrimp with bacon. Didn't use the herbs, just replaced them with Tony Chachere's spice. I'll probably actually up the spice next time.

It turned out ok, Cat likes her grits a little looser, I like'm thick. So next time I'll probably throw some more butter in and add a touch of milk to whatever helping I give her.

Tried the "pan fry the solid block of leftover grits" method this morning. It met with little success. My use to butter and bacon grease was less than spectacular on a culinary level, but was fantastic on a pyrotechnic level. Seems like if I used my standard peanut oil it'd work out a little bit better.

Eh, it was worth trying. I wonder what I should try next week.
