Send her a copy of Gluten-Free Girl and the Chef - and its prequel, Gluten-Free Girl. It's based on the blog of the same name; Shauna and Danny have a huge archive of recipes, including recipes for bread, pasta, and everything else a recently-diagnosed celiac sufferer could want.

I can't speak for their bread recipes, because they usually use rice flour and that's a non-starter with me, but everything else of theirs that I've tried is absolutely wonderful.

Do you know grain_damaged? She also has celiac and she belongs to a GF group in Portaland. She has a blog for that here: http://graindamaged.blogspot.com/

Hope that helps!

I will also add that Bob's Redmill online is a GREAT resource. Shipping is expensive because of the weight, but you can buy straight from the factory IN BULK. My friends swear by their pizza crust mix. I've made their chocolate cake mix with good results (though I think my recipe is easier and better). They also have a variety of other bread and dessert mixes, GF flours, xanthan gum, etc.

As for morning cereal - rice chex and corn chex are GF. Rice Crispies makes a GF version - but it is in a different box, so read the lables! Our WalMart and grocery store both carry GF Bisquick and a few Betty Crocker GF dessert mixes. Being we're litterally at the ends of the earth, I imagine your stores do as well. My friend and her family love the pancakes they make with the Bisquick.

I hope this helps your friend. And if she finds herself with a dairy intolerance on top of it all... I can help there too.
;)
