venison steak burgers (alpha 1)

venison steak is hard to come by as most of it goes directly to export & restraunts.
having acquired some venison steaks from one of our clients, i decided to make some delicious
steak burgers with them. since i have 8 steaks in total i can incrementally test & change my recipe until it is as close to perfect as i can make it.

ingredients
foccacia bread
2x venison steaks - unfrozen
1 large handful mesclun salad
1 handful colby cheese (grated)
Lone Star original (best venison sauce ever)
olive oil

method
preheat frying pan to hot (i know when my skillet is ready when it gets too hot to hold at the handle and a cloth must be used).
cut foccacia bread into four slices.
rinse salad and toss with a little olive oil.
turn grill to hot.
place venison steaks on the frying pan and fry 1 minute on each side, then remove from heat.
while venison is frying,  drizzle a little olive oil on the bread & place under the grill to lightly toast.
remove bread from the grill. remove any bone from the venison & place on the bread selected for the burger base.
top each with cheese & return to grill to melt.
remove from grill & apply sauce.
pack the salad together to form a "salad pattie" & place this on with burger top.
served with any extra salad & a large glass of mango nectar.

thoughts
as i was frying the steak it occurred to me that maybe i should tenderize the meat first. actually, the meat was really tender already,
although tenderizing it further would still have made the area larger.
i considered putting a dressing on the salad but declined, thinking the taste would be locked out by the strong
venison & lone star flavor. actually, a vinegarette or lemon dressing would have complemented everything nicely.
i also did not put enough lone star on the burgers and the whole thing was dominated by the venison flavour. these are things to correct next time.

6 steaks remaining - let's see where i go with this..
