Another Dinner....

DO IT!

Portobello mushrooms, sliced - sautee
Add red onion slices, chickpeas, olive oil, & chicken breasts
Add a few minutes later - pinch of cilantro, generous sprinkling of pesto mix (or pesto from a jar), generous splash of cooking sherry, a few sundried tomatoes and olives (preferably nice green olives stuffed with garlic), garlic powder, squeeze of lemon juice, and 3 tablespoons of buttermilk ranch dressing (no I'm not crazy, this is REALLY GOOD).
Sautee until chicken is thoroughly cooked and onions are tender. Sprinkle with feta and black pepper.
