So, just out of interest -
Anyone out there have yellow squash (I think they're patipans, but we keep letting them get too big so we have to cut the seeds out), zucchini (umm... I think that's courgette to the Brittish people on my friends list), or tomato recipes that you'd like to share? (particularly for the zucchini and squash, we're doing pretty well on tomato recipes, honestly.)
We have a garden. The garden insists on continuing to produce insane numbers of vegetables. We also have a bunch of cucumbers. And, living in southern california, we can probably get any other vegetables the dish would need fairly easily.
Though I like the muffin/cupcake things I made this afternoon using a carrot cake recipe and replacing the carrot with squash and zucchini. (We also determined that latke-like things using squash in place of the potatoes was good.) And I need to make more of the zucchini-cheddar bread with bacon (well, and done in muffin tins, that really does work better than the loaf.)
But really each of those recipes ends up using up one or, at most two (and some of them really only use one if you do a double recipe.) We've got six or seven more squash and four zucchini... and there are more growing out there. Help!
