i got friends in nashville, or at least they're folks i know
three cold summer salads i have recently made and loved:
strawberry basil salad
combine:
hulled strawberries, sliced into thirds
basil leaves cut into a chiffonade
sugar
balsamic vinegar
chill strawberry mixture and combine in another bowl:
one cucumber, peeled and chopped
salt and pepper
minced ginger
lime juice
combine strawberry and cucumber mixtures. viola! (this one and the couscous salad i made up on the fly, so there are no measurements. uh, sorry. guesstimate?)
lemon artichoke couscous:
combine:
2 cups water
salt and pepper
butter
chili flakes
saffron (tediously expensive, if you don't already have some on hand, there's no need to buy it special, just leave it out.)
juice and zest of one lemon
bring water to boil. add:
one can artichoke hearts (the kind that come in water, but drained), finely chopped
1.5 cups couscous
turn off heat, let sit for ten minutes or so.
peanut sesame noodles
(this is 97% of a recipe by smitten kitchen with some alterations because i can't leave well enough alone.)
blend in blender or food processor:
1/2 cup smooth peanut butter
1/4 cup soy sauce
1/3 cup warm water
2 tablespoons minced ginger
1.5 tablespoons toasted sesame oil
1 tablespoon honey
1 teaspoon dried chili flakes
combine dressing with 3/4lb soba noodles, boiled and rinsed with cold water. top with the following:
thinly sliced red bell pepper
roughly chopped cilantro
shredded carrot
diced seedless cucumber
toasted sesame seeds
diced hard boiled egg
(when i make this for lunches, i put the vegetables in separate zip lock bags with a little bit a lime juice and the sesame seeds in a little salad dressing container and combine it all one serving at a time so everything doesn't get soggy.)
