Found an interesting cheap recipie today, Poor Man's Pizza. It's essentially quickie flatbread with some toppings. From none other than James Barber, the Urban Peasant. I always liked that guy when I watched him on TV when I was a kid for some reason... must have been his natty accent and the ever-present grin that says "I really like my job". But upon redisovering him I like him for another reason: cheap food does not equal Kraft Dinner with a can of tuna thrown in. Cheap food can be easily done from scratch. Cheap food can be soul food.
The entire pizza must have cost me an entire dollar to make. A twonie, tops.
To make the crust, take
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons vegetable oil
4-6 tablespoons water
Mix it in a bowl. Knead it with your hands, until you get a stiff-ish dough. Then add:
A handful of grated cheese
1/2 tsp organo
And mix it in the dough. Knead for another minute. With your hands, a rolling pin, or even a bottle, flatten it until it's as thick as your little finger.
Heat some oil in a fry pan ("The first breadmakers didn't have ovens, so neither will we.") put the dough in and cook over medium-low heat for five minutes.
Turn it over and top with whatever you like ("sliced tomatoes, fried bacon, sliced mushrooms, canned shrimp or salmon, avocado, salami, ketchup -- whatever" I used leftover spagetti sauce and some pepperoni) and another handful of grated cheese. Cook for five more minutes. For a chewy crust, cook with the lid on; for a crispy crust, don't use the lid.
