Oo, okay, I have a few fave apps!
Big Flip Clock is a pretty cool alternative to the pre-installed Clock app.
Calculator+ is a pretty calculator where you can switch between buttons and handwriting.
I use Meebo for gtalk.
Wapedia is a neat wiki search app. You can even save entries to read offline.
I use SG Buses to check out bus info -I wouldn't say it's particularly user-friendly- but it's okay.
I'm still testing out the camera apps but I particularly like apps like Pudding Camera (various picture effects), SmileCat (like a Korean neoprint machine?), More Lomo (also, picture effects) and FaceShift (you can switch faces between people in group photos xD).
MobileRSS is pretty okay as an RSS reader.
SketchBookX is nice for drawing. It has a bunch of tools.
Presumably, you already know that Kotoba! is an awesome, free Japanese dictionary? ;)

Kotoba! was one of the 1st treasures i found when i poked around the app store. It's so awesome, I still can't believe it's free 8D
I haven't tried out all the apps you mentioned but OMG, I'm so addicted to Cut the Rope already. He's way too adorb when he points to his mouth!
