Well, all Pensieve 'juice' IS is a person's memories, ie the stuff Dumbledore produced in little bottles throughout HBP, and the stuff he and Snape would fish out with their wands to keep things private. So this time, Snape's memories/thoughts just oozed out, instead of being taken out in a more controlled fashion. Hey, the guy was dying. :P
I've been listening to PS/SS on audio at my daughter's request (we're about 3/4 of the way through the book reading it out loud) and we've just passed the scene where Petunia shrieks, "Knew? Of course we knew! My dratted sister being what she was..." etc and, like you, I felt badly for her this time around. You could clearly see the jealousy this time.
Also, if you haven't made the connection yet, someone else pointed out that in OotP, when Petunia indicates she knows what Dementors are, she mentions "That awful boy" told Lily. It wasn't James, like we all thought. My own OMG moment was realizing that THIS was why Lily didn't have to die - which we knew all along from the Halloween 1981 flashbacks, but never could figure out.

Oh, the awful boy! I didn't even think of that. Neat.
