For dinner tonight I made burgers that consisted of ground lamb, sliced bacon and sliced skirt steak. I dubbed it the
ManBearPig burger.
I originally tried to create this for a post Thanksgiving dinner that appropriately featured a
TurDuckEn. When I made those I made sliders instead of full-blown burgers since it was a potluck. But those had a higher ratio of ground lamb so they just tasted like lamb burgers.
This time the ratio was closer to 1 part lamb, 1/4 bacon and 1/4 skirt steak. This time you could taste the various meats making it much more interesting and satisfying. I think I'm going to use this same combination to make meatballs and a thick tomato sauce from scratch.
