this recipe from a great recipe blog,
Simply Recipes, I made a one dish roast potatoes and kale with tilapia.
While the tilapia was thawing in the sink, I cut up the potatoes and tore the kale into smallish pieces, tossed them in basil olive oil and fresh basil, and threw it in the oven at 400F. I was worried that I hadn't blanched the potatoes first, so I covered the dish with aluminum foil for a while, but I don't think I needed to, in retrospect.
When the tilapia was thawed, I smeared it in olive oil and salt, then stuck it in the fridge until the potatoes were almost cooked. When the potatoes were nearly done, I put the tilapia fillets on top of the potatoes and kale, then baked it for another 12 minutes.
Most of the kale turned out crispy and the dish as a whole was exceedingly easy to make, being all in one tray. It was also very yummy.
