Usually it's something fancy and romantic. There's something to be said for home-cooked, too, and here you wouldn't even need to take the type to actually cook.

Fine dining, usually. Something more expensive than you'd have on regular dates. The setting is more important in making it romantic; you should feel like it's just you two there, that everything is set up just for the two of you.

It's also better not as a surprise. Keep some of the details secret, but check with the other person about the overall plans. Nothing's worse than planning a whole event only to find out that they can't make it.

It is best to ask if they can spend the day with you. It's just polite. Also, for all you know, they're planning their own surprise, too.
