Rajeev's peppermint oreo ice cream

Today I tried out Rajeev's recipe for peppermint oreo ice cream, with a million thanks to Monica for passing it along. it was heaven! the peppermint is a nice soft background for the crunchy, chocolatey oreos. I had to restrain myself from eating half the batch with a giant spatula.




Recipe:

2 large eggs
3/4 c. organic sugar
1 c. 2% milk
2 c heavy cream
peppermint extract to taste (I used about 1.5 tsp, but I could have added a bit more)
at least half a package of oreos, because I don't fool around.

whisk together eggs in a big bowl, add in the sugar slowly, then the milk and cream. I poured this mixture into the ice cream maker and went easy on the peppermint at first. I let the ice cream maker do its thing for about 30 minutes. then I folded in the crushed oreos.

the result was pure magic. Monica, you will have to thank Rajeev for me!
