Mexican Chocolate Cake

Hi everyone! This community sure has grown quickly...yay!

I'm not vegan, but I happened to try this vegan recipe from bakebakebake for "Mexican Chocolate Cake" a few weeks ago when I was low on non-vegan cake ingredients. here is a recipe from COK's dessert recipe page. They have some other stuff that uses more normal type ingredients. Cakes are pretty easy to make with out getting vegan-ish stuff, and you can use store bought frosting (many are vegan!).

This recipe calls for optional chocolate chips. You don't have to look for vegan on the package (or buy carob...ew...), lotsa brands are vegan like Ghirardelli semi-sweet chocolate chips and a lot of cheaper store brands too.

Chewy Fudge Brownies
Makes 20 brownies

1 teaspoon baking powder
1/2 cup cocoa powder
2 cups flour
1/2 teaspoon salt
2 cups sugar
1 cup oil
1 teaspoon vanilla
1 cup water
1 cup dairy-free chocolate chips (optional)
1/2 cup chopped walnuts (optional)
Preheat the oven to 350oF.

Combine the dry ingredients in a mixing bowl. Stir in the wet ingredients. If desired, add chocolate chips and/or chopped walnuts to the mix.

Pour mixture into a greased 9"- x 13"-inch baking pan, and bake for 20 to 30 minutes. (For moister brownies, bake 20 to 25 minutes.)

Let the brownies cool slightly before serving.
