Coconut milk?
Does anyone have a recipe (or can point me to one online?) for some kind of cake that uses coconut milk?
I made tons of Thai food for some friends last night and got through lots of coconut milk, but I accidentally opened too many tins and now I have about 1.5 litres of coconut milk that I need to use up as soon as possible! I could make more Thai curry type stuff, but we had so much of it last night, I'd like to try something different! I've had a quick look online but I haven't found very much, so I thought it'd be worth asking on here. Also, does anyone have any experience of just using coconut milk as a substitute for cow's milk in a cake recipe? I'm not sure if the different fat contents would mean that it wouldn't work as well.
