Vanilla French Cupcakes

1 C vanilla soy yogurt
1 C icing/powdered sugar
1/2 C canola oil
1 1/2 t pure vanilla extract
1 1/2 t pure chocolate extract
1 1/2 C all purpose flour [spooned and leveled]
2 t baking powder

preheat your oven to 350F. line 9 of your 12 muffin tins with cupcake liners.
in a large bowl, sift together the sugar, flour, and baking powder.
in a medium bowl, whisk together yogurt, extracts, and oil.
add wet ingredients to dry, stir until combined and no lumps are left. Try not to overmix…
pour batter into prepared cupcake liners.
bake for 19 minutes or until toothpick inserted in the center of one of the cupcakes comes out clean. remove from muffin tin and let cool completely before decorating.

*I used almond and more vanilla extract rather than chocolate.
*The recipe says that it makes 8-9 cupcakes, but I got a full pan.
I had some leftover chocolate mousse in the fridge and strawberries were on sale, so tada. I'd been wanting to try this recipe for awhile, and my best friend's birthday on Sunday was the perfect excuse. She said they were "good, but sub-par". I haven't had one yet myself, so if anyone tries this recipe please let me know how it turns out!
