makes 3 huge cookies, or a larger amount of smaller ones, if you're feeling less evil than I do...;p
1/2 cup whole wheat pastry flour
1/2 cup rolled oats
1/4 t baking soda
1/4 t salt
1/4 cup mini chocolate chips
1/4 cup walnuts [or other nut], chopped in smallish pieces
1/6 cup peanut butter [or other nut butter, if you prefer]
1 T canola oil [or other mild-flavored oil]
1/2 cup light brown sugar
1/6 cup soy milk
1 t vanilla extract
set oven to 425F. prepare cookie sheet [I use a Silpat, it works wonderfully!]
whisk all wet ingredients together until smooth.
sift flour, baking soda and salt together. add rest of dry ingredients to flour. add wet ingredients to dry ingredients, mix until well combined.
separate in three, or however many cookies you want to get out of the batter, and place upon cookie sheet. bake for approximately 8 minutes, depending on size. you might want to check them out after 5 or 6 minutes if you made them way smaller, though. let cool on cookie sheet for about 5 minutes, then place on a rack to let cool.
